#64: Try 30 New Recipes (11 of 30) - Ooey Gooey Pumpkin Butter Cake

Trevor's Aunt Debby made this cake a few weeks ago and I LOVED it.  She passed on the recipe and I've been tempted to make it since.  After surveying the ingredients (two sticks of butter!), I decided I should wait and make it when I could take it somewhere and not be faced with a whole pan of gooey goodness staring me in the face every night when I get home from work.  I know my limits.

So when we had a treat day this past Friday at work for Halloween, I knew what I was going to make!  It was as good as I remembered....that Paula Deen sure knows what she's doing.

Paula Deen's Ooey Gooey Pumpkin Butter Cake
  Ingredients:
Cake:
 

-1 (18 1/4 oz.) package yellow cake mix

 

-1 egg

 

-8 tablespoons butter, melted

Filling:

 

-1 (8 oz.) package cream cheese, softened

 

-1 (15 oz.) can pumpkin

 

-3 eggs

 

-1 tsp. vanilla

 

- 8 T. butter, melted

 

-1 (16 oz.) box powdered sugar

 

-1 tsp. cinnamon

 

-1 tsp. nutmeg

Preheat oven to 350 degrees F.

2 Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.

To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.
